Easy Weeknight Dinners and Snacks

Ernie and I recently joined a gym together and currently working out our weeknight routine. Since Ernie doesn’t get off work until at least 5 pm, if we want to work out together, we find ourselves eating dinner around 8 pm. With little time to prepare meals, I am going to go you our go-to easy weeknight dinners.

If you read my post making Cheddar Bacon Pinwheels, you saw my love for Hidden Valley Ranch Seasoning Shaker (link). This seasoning shaker makes meals so flavorful and there are so many unique ways to incorporate it into your recipes!

I have been on such a popcorn kick lately and I love sprinkling the Hidden Valley┬« Seasoning Shaker on my popcorn.

Another easy recipe for snacking are ranch pretzels.

The recipe couldn’t be more simple!

  • Preheat your oven to 300 degrees Fahrenheit.
  • Melt butter in the microwave on 30-second intervals until fully melted.
  • Mix pretzels and butter in a medium-size bowl
  • Sprinkle Hidden Valley Ranch seasoning and mix well.
  • Spread pretzels on baking sheet and bake for 15 minutes. Check to see if all pretzels are crispy and coated. If needed, bake longer for 15 minutes. But with my pretzels, they were done within 15 minutes and crispy.

Of course, popcorn and pretzels can’t be a meal, so here are some dinner recipes that I have been using with my seasoning shaker.

Slow Cooker Crack Chicken

Who doesn’t love cream cheese, hot sauce, and ranch? This meal is easily put together and all the cooking is done during the day since you are using a slow cooker!

Ranch Baked Chicken

This recipe is going to be an instant classic. Add any vegetables or sides that make you happy. Since it’s spring, I am loving asparagus and artichokes. My husband loves classic carrots and mashed potatoes.

After dinner, make time for a movie night or catch up with your favorite TV show with a bowl full of popcorn seasoned with Hidden Valley Ranch.

Ernie and I are currently watching the newest season of Santa Clarita Diet, The Punisher, and Queer Eye – I can’t get enough of Jonathan!
